Big Breakfast!
I thought my sunny side up was fried to perfect runniness, but it was set inside..
Toasted baguette.
Roasted Veggies: broccoli, garlic, red onion, carrot, red pepper, mushroom, eggplant. Olive oil, salt, pepper, lemon juice. I thought I put too much lemon juice the first night, but the leftovers were okay.
Roasted veggies on top of pasta

A Super Quick Dinner
Sautéed onions, mushrooms and tomatos to put over my greens. I discovered this when I put extras from my omelette over a breakfast salad. Also having my last Scotch pie from the package tonight. I'm so happy to be finally done. The pies weren't bad, but definitely not something I'd buy again.

Gritney's Meatballs
Breakfast!
Rachel came over and we made meatballs from pork sausages.
Chives and basil from my garden (my two potted plants). The usual recipe is with a can of tomatoes but I have so many fresh ones that we decided to go from scratch. This kind wasn't as juicy so we had to add a little water to make it more soupy. I would like to tweak the recipe some how and make the soup more saucy and thick.
Cook the meatballs first!
At first, we just cut up the baguette, but it was too soft. I popped some in the oven with a bit of olive oil and then it was perfect!
YUM! Fresh veggies, meatballs, cheese and crusty bread. Such an easy recipe. You can put as much or as little effort into it as you want. The pork sausages have so much flavour that you don't really need to add seasoning. We made four portions and ate it all between the two of us!
Tollhouse recipe for chocolate chip cookies! My new oven is very small so the cooking time is much faster than called for in recipes. These cookies came out the best when the cooking time was 8 1/2 minutes. Soft and chewy! I put them in a box the next day and they're just as good.

Sunday Omelette
I tried to make an omelette with just two eggs and no milk just like my friend suggested. It was nice and thin. It cooked very fast. I didn't burn it but it wasn't soft enough on the inside. I sautéed the filling before I made the omelette. I used a mix of mushrooms and tomatoes. Next time, I'll add onions too! I put the extras on my salad and found that I quite liked the warm mix.
My usual quick lunch but this time I put some spinach in it! The plum was sour =(

Big Day of Shopping!
Today, I went to Iceland AND Lidl. I bought so many things! I think my kitchen and fridge is finally ready to go. I have groceries to last for a long time and all the staples in stock. I'm fortunate to have two fridges in my new flat and lots of cupboard space.
Nusica! A rip-off of Nutella. It came in a bigger jar at the same cost so I went with it. All my life, I've only known round eggo waffles. I bought square ones I can pop into my toast at Lidl!
You can buy a big bag of ready to eat carrots for only a pound. I folded over a tortilla with my favourite hummus, cheese and ham combination and cut it into four triangles. I took out some pre washed Italian Salad mix, cut up three cherry tomatoes and sprayed (yes! my bottle is outfitted with a spray nozzle!?) some balsamic vinegar.

Breakfast and Dinner
I used two eggs and added some milk because I didn't think there was enough egg. The omelette took a long time to set. I put the cheese, tomato and spinach in at the same time. The cheese was melted but the tomatoes tasted too raw and crunchy.
Amazing night view. Wonderful company. Delicious food. And refreshing pear cider!
We roasted an assortment of vegetables with chicken thighs nestled in between. 220C for 35 minutes. The vegetables were done first so we took it out and gave the chicken another 5 minutes. Only used olive oil, salt and pepper to season. Italian salad mix with cucumbers sprinkled with lemon juice.
