Lemon Parm Chicken

Baked the chicken seasoned with lemon juice, basil, garlic, salt, pepper and parmesan cheese. The garlic, I salted and mashed before smearing it over the chicken. Little extra work for mega big flavours!

Spaghetti and Meatballs

One serving of pasta is a lot of pasta.. I ate less than half but easily devoured the rest after going to the gym!

Lemon Basil Parmesan Pasta


I tossed the rest of my tomato cheese tortellini in this sauce. I got a bunch of new herbs today!: greek basil, thyme and mint. Unfortunately, I had to throw out all my old ones because they were wilted and mouldy. I will try harder with my thumb this time around!

Grilled Cheese Sandwich + Broccoli Chicken Bake


My gorgeous looking bread! (too salty.. I need to buy correct measuring spoons, I'm convinced that my poundland ones are wrong)

No Knead Beer Bread

French Toast and Curry


French toast! and fresh fruit =)


I don't know how to use my food processor.. it pulverized my meat. I think I'm going to return it.. even though I went through so much trouble to get it and then to exchange it. I think it's a great addition to the kitchen but I keep it out all the time so it's not easily accessible and it's so troublesome to clean. 


I used the rest of my tikka masala sauce.

Roast Chicken with Vegetables


I defrosted two chicken thighs that I had already marinated before I froze them. I plopped them on some veggies and put everything into the oven.


I cut the chicken a little to test the juices, but they weren't ready yet so I put them back in the oven and kept the vegetables in the warmer to stay warm.


Great colour! and crunch to the skin! (though I didn't eat the skin =( what a waste)

Tortellini, no sauce pasta


This omelette was almost okay! Tips to self: use butter (lots of it!), wait till butter gets foamy. I had my pre cut, pre washed fruit from yesterday with some yoghurt. 


I had some of the soup I made yesterday. Then I left it on the counter to cool. Today, I had a boil and put the rest in the container in the freezer to have after my trip to Paris. I have too much food in the fridge right now!


I used the rest of the spinach ricotta tortellini from the bag. I lightly cooked some mushrooms, chicken and red pepper and mixed it all together with parmesan on top.

Omelette still fail!


I rushed folding the omelette again and I had to fold it in three parts.


Sautéed mushrooms, tomatos and onions.


I boiled some sweetcorn, then I put in chicken, carrots, potatoes, onions and barley broth mix.


When the chicken was ready, I took off the meat off the thighs and put the bones back into the soup.


Prewashed raspberries and strawberries so it's easier for me to eat tomorrow!

Spinach and Ricotta Tortellini

The fresh pasta was store bought. I opened a can of plum tomatoes (I had such a hard time figuring out my new can opener, I almost gave up and ate cereal for dinner!). It took a while to caramelize in the pan so I added some sugar to speed it up. I sautéed some mushrooms, garlic and onions. Next time, I'll put more mushrooms in and cut them chunkier. I wanted to see them with my pasta.

Big Cooking Day

I only had class from 9-12 today so I decided to make a couple of dishes to last me until the weekend. First, I stir fried some of the vegetables I had in my fridge: broccoli, red pepper, onion, carrots. I mixed in some of the sweet tomato chilli sauce leftover from cooking with Heather when I first moved into Kelvinhaugh.


I start off with green onion and garlic, and then I added the rice with a little bit of water. 


All nice and brown from a little bit of soy sauce! I added some ketchup. Western style fried rice.



Vegetables are thrown back into the pan. I had a quick plate of fried rice and then it was back to more cooking!


Leftovers!


Prep for the soup in my little slow cooker. Boiling water and everything in at the same time and just let it sit! I soaked the barley mixture for a bit, but not that long since it will spend a lot of time simmering.

Fresh herbs (milk and butter) make everything taste so much better. With the meat, I put in carrots, onions, and LOTS of mushrooms but you can't see because I cut most of it super fine.


I popped it into the oven and put it under the grill for the last bit to get the peaks browned. All done and in the fridge for tomorrow!


Everything's ready in the slow cooker! I saved some leftover rice to put in with my soup.
