Okonomiyaki Sauce Meatloaf

- 2 eggs
- 2 cups bread crumbs
- 2 cups grated carrots
- 4 cloves garlic, minced
- 1/4 cup okonomiyaki sauce
- 1 tsp each, ground ginger, salt
- 1/2 tsp freshly ground pepper
- 1 onion, diced
- 1 lb lean ground pork
- 1 lb chicken
- 1/4 cup okonomiyaki sauce

Directions:

1. In large bowl, whisk eggs. Mix in bread crumbs, carrots, garlic, 1/4 cup sauce, ginger, salt, pepper, and onions. Mix in meat.

2. Pack into two loaf pans, molding top. Spread okonomiyaki sauce over top; roast in 400F oven for about one hour.
